How elegant does this need to be?are you the only one cooking or are a few mothers doing together? Can u do buffet style?

Soup: either, Veggie/butternut squash/zucchini make 1 huge pot, serve in a bowl with a plate with a dinner roll to wash

Penne a la vodka or lasagne or
Baked ziti
Salmon in dough squares or fish sticks. Or to be fancy take small nugget size pieces of tilapia/flounder, put onto skewer, drizzle with dark sweet sauce or BBQ sauce, maybesprinkle sessme seeds and bake 20 minutes. Looks pretty on the plate.
Sautéed or baked veggies.
Salad if u think they'll go for it

Sodas on table
Maybe hot cocoa drink or chocolate milk?

If u want more elegant, maybe add an appetizer, u can get portobello mushrooms, scoop out gills and stem, place on baking sheet hill side up, put a spoon of tomato sauce and sprinkle cheese on top, bake 10-15 minutes.

Dessert
Can they assemble their own ice cream cones with a choice of a few flavors and toppings?

If it's on your own I'd do super simple and easy, buffet style. If it's together with other mothers you can make it nicer...maybe ask one of the mothers from last year what they did?
