I don't own a mixer. You can make any cake easily if it doesn't call for separating eggs or beating them high.
I don't have any recipes on me right now, but offhand I remember a very good choc cake recipe in Kosher by design for kids.(susie fishbein).
look through any cookbook , keep an eye out for cakes that don't call for marg or alot of eggs.
They should all work.

I agree that for most cakes, you don't need a mixer.
If the batter is thin enough, I use a whisk at the end to smooth it out. works great for most cakes.

I realize this is a super old post. But in my search for easy/yummy recipes, I loved this one. I made it with apples & then before almost done, generously drizzled maple syrup on top & baked more. My husband is a bit on the picky side & really liked it.
Anybody have other ideas? I like ideas to make something VERY easy then a little fancy. Ie, a simple choc cake, can add thin frosting (for "glue"), & then with a vegetable peeler quickly add chocolate-bar shavings.
Any ideas? Thanks!
