I cooked for an hour on medium high. Now a little too dry. Did I overcook? Thanks

probably ... make a sauce, a cranberry relish or cut into pieces and turn into a turkey salad with mayo, garlic, pepper, diced red onions, celery maybe a little cayenne pepper or chili powder
