Sushi grade tuna??

I bought tuna labeled sushi grade from a reputable kosher store today. My intention was to sear it (medium rare) for dinner. But I noticed that it has a sell by date of 1/26. How can it be used for sushi with a sell by date so far ahead? Now I'm nervous. WWYD?

Sushi should be made the day you buy the fish.

Searing it medium rare will be fine. I like to coat mine with powdered wasabi first, and cook it in a super hot cast iron pan (only cast iron will work well). The wasabi turns sweet, and is not very hot at all. Don't mix the powder with water first, just rub it on the fish.

What time are you serving dinner? Wink

No. If it would smell I wouldn't eat it fully cooked either.

In my area, tuna is only available vacuum packed frozen. The fish is frozen immediately after being caught and is sushi grade. (The season for fishing tuna is a very small window of time each year.)
Could yours be frozen like this?

KRM sells tuna steaks. Or at least they did in the summer. Haven't looked for it in awhile.

Yes I've bought there when they have it. Also, when they have it's vacuum packed as well, same packaging as when I buy it at the fish store flash frozen.

I've bought at Freunds Fish (adjacent to the sushi syore), Mehadrin Fish, and other fish stores. Sometimes KRM and Moishe's has it.

It was either fresh or defrosted.

Well we ate it seared and we all lived to tell. I'm still really confused how something can be sold as sushi grade with such a far off expiration though. I did check with a store employee who insisted it was okay.

Like ra mom says, it's flash frozen and vacuum packed so it can last a week or two in the fridge. Doesn't seem weird to me at all.

What the others said.
It gets frozen on the boat.
If it was sold vaccum packed, then it's fine.
