Find a recipe for basic shiro miso soup.
You can add seitan, wakame seaweed, shiitake mushrooms, and sliced green onions. Very good for cold weather!
Seitan is also good in veggie stir fries.

I don't have a recipe, but a udon noodle inspired soup bowl might be nice. A vegetable broth seasoned with ginger, garlic soy and sesame oil. Before serving, add sliced seitan, matchstick vegetables and udon noodles.

I've made homemade seitan using vital wheat gluen a few times and used it in stir fry.

I sent her the recipe ... not something I am going to bother with since I cannot eat it & she cannot bring it back to cleveland - she does have that nutritional yeast though ... I'd rather buy a small amount already made

so we made our own recipe using things we could get ... tofu chunks, thin green squash, mushrooms, scallions, soy sauce, fresh ginger, crushed garlic, red pepper and red pepper flakes, finely chopped baby spinach & rice/quinoa pasta
