If any of you mix and knead your challah by hand, go buy one of these:

It makes mixing the dough much easier, less kneading is required, and the results are lighter and fluffier than ever.

Is there a limit to the capacity that it can handle? Have you tried this with 5 lbs. of dough?

How many pounds of flour mixied with water could you mix with this?
I would imagine that your hands would hurt after this or would'nt mix well unless its really a small amount

My impression from the Amazon and king Arthur reviews is that it can't mix a 5 lb batch of dough.

I never make 5 pounds, so I don't know. I start mixing after 3 or 4 cups, then continue mixing after each cup I add.
IMNSHO, its much easier, and turns out better, than doing it by hand. I'm sure a mixer would be even better, but I don't need yet another kitchen appliance.
