Our anniversary is coming up and I would like to have a nice dinner. It does fall on a weeknight so I don't want it to be too long or complicated to prepare so looking for ideas and recipes. No fish please. Thanks!

When I was short in time and wanted to do this I bought rib steaks that could be seared quickly, and ready frozen curly fries that could be baked at high heat easily on a cookie sheet, roasted green beans for 8 minutes and had a full restaurant worthy main dish.
I also started with nice plates of salad, an ice bucket with wine and goblets on the table, roses, petals, candle sticks, etc.

It was for an at home date night. In any case, you're right, it's nice for both spouses to do things for each other.
