1/8 c oil
2 eggs
1 cup firmly packed brown sugar
3/4 cup + 1 Tbsp maple syrup
1 tsp vanilla extract
2 cups whole wheat flour
1 tsp baking pwdr
1 tsp baking soda
2 1/2 cups quick cooking oats, uncooked
1 cup quinoa, cooked according to directions
1 cup chocolate chunk or other addin like craisins
Beat oil, eggs, brown sugar and vanilla until smooth. Add maple syrup.
combine flour, baking pwdr, baking soda, and mix (supposed to mix separately first)
Add oatmeal and cooked quinoa. Add chocolate chips or addins
Bake at 350 for 16 - 18 minutes (I do shorter for small cookies) cool before removing from pan, they are very soft at first. |
Do u think it can work if I double the flour and omit the oats? Also what's the quinoa texture like in the cookie?

The quinoa cookies are chewy. I find after I freeze them (we eat them straight from the freezer the quinoa gets a bit crunchy but everyone likes it that way).
Really good oil based chocolate chip cookie. I bake as cookies (cut the baking time to 9 minutes) or bars and always double the recipe becuase it makes a small batch and disappears quickly.

And these spice cookies are very similar - but with a fall spiced flavor. I bake as cookies or bars.

The recipe on the back of a bag of craisins - white chocolate chip craisin oatmeal cookies. They are amazing! I don't have a bag on hand right now though. It is on the back of the bag though.

I made brown butter oatmeal chocolate cookies the other night. Totally worth the milchigs. I tried it also with margarine and it actually came out pretty good, though of course the milchig ones were THE best!!!
1/2 cup butter
1/2 cup sugar
1/2 cup dark brown sugar
1 egg
1 tsp vanilla extract
1 1/4 cup flour
3/4 cups oats
1/4 teaspoon salt
1/2 teaspoon baking powder
12 squares of milk chocolate
brown the butter, add the rest. the chocolate goes inside.
Baking is at 350 for about 12 minutes

Bump.
This sounds yum and easy.
Does anyone know if the 1 cup quinoa is measured before or after cooking??
