This was very easy and good. Only needs a simple veggie or green salad to complete. Quinoa is such a healthy grain

APRICOT-GLAZED DRUMSTICKS WITH QUINOA

½ cup apricot jam
1 tablespoon Dijon mustard
1 teaspoon Sriracha sauce
1 clove garlic, finely diced
1 tablespoon less-sodium soy sauce
6 chicken drumsticks
1½ cups quinoa, rinsed
2½ cups chicken broth
1 shallot, finely chopped (about ¼ cup)
1 tablespoon extra virgin olive oil
Kosher salt
½ cup chopped scallions, white and light green parts only
2 tablespoons chopped fresh cilantro

1Preheat the oven to 375°F, with a rack in the center position.

2In a large bowl, whisk together the apricot jam, mustard, Sriracha, garlic, and soy sauce until combined. Measure out 3 tablespoons of the marinade and set aside in a small bowl. Place the drumsticks in the large bowl with the rest of the marinade, turning to coat. Set aside to marinate while you prepare the rest of the dish.

3Stir together the quinoa, broth, shallot, olive oil, and a pinch of salt in a 9 × 13-inch baking dish (or large oval baking dish). Add the chicken drumsticks (with their marinade) to the quinoa, spacing them evenly apart.

4Transfer to the oven and bake, uncovered, for 20 minutes, then gently stir the quinoa around the pan with a fork to help distribute the moisture in the pan evenly. Continue baking until the quinoa is tender and a thermometer inserted into the thickest drumstick reads 165°F, 20 to 30 minutes longer.

Serve hot topped with the scallions and cilantro, with the reserved sauce on the side for drizzling.
