The Peppermill sells the molds but I wasn't able to identify the one I saw in real life on their website.

Here is an explanation of the acetate sheets.

Texture sheets allow you to create a textured pattern on the chocolate log. You would use it while the chocolate is still wet so the log dries with the design.
