I'd prep them now and freeze them in stacks with layers of wax paper between them. Defrost m"s and bake them fresh before seuda.

Problem is I defrosted the meat...not sure I can re freeze. I am planning on grilling them(easier for me) is it bad if I make tomorrow and refridgerate?
Or can I freeze them cooked?
