Need help with Shabbos menu - guest has dietary restrictions

Hi all,
I am hosting a guest for Shabbos who r"l has a lot of health/digestive issues and I need to adjust my menu accordingly.
On the 'no' list: onion powder, garlic powder, all sauces and all dressings.
Cooked onions are ok in small quantity.
Ketchup is OK.

Any recipes that do not include any of the above?
I am already planning on making gefilte fish, chicken dipped in egg and bread crumbs, and some sweet vegetables roasted with honey.
Any other ideas?
I am especially mystified as to how I should flavor my cholent!

Make cholent with a bottle of diced tomatoes, cumin, sweet potatoes and lamb or beef and barley

You can make Israeli salad with olive oil, lemon, salt and pepper.

Grilled veggies with olive oil salt, pepper,

Kuggel (potato, broccoli, cauliflower etc)

Sweet kuggel/muffins (carrot, butternut squash)

Basic meat/steak seasoned with salt and pepper, sauce on side for other guests who want

For cholent maybe try extra salt, pepper, paprika, ketchup, fried onions. Maybe some non-traditional spices like Italian, curry, or cumin?

Make the cholent with cooked onions, brown sugar, tomato sauce, salt and pepper. Make sure there's meat and bones for extra flavor.
Roasted potatoes or potato kugel don't necessarily need onion or garlic.
Salmon can be made with teriyaki style with a mix of soy sauce (is that allowed) and honey.
Cole slaw, cucumber salad, marinated salad and potato salad don't need those either.

Spice Cholent liberally with oregano, thyme, salt and use fatty fleish.

Salmon baked with olive oil/salt/fresh dill

Rice mixed with veges as side.

Roasted butternut squash with brown sugar,, allspice, ginger and crushed cloves can be a thing of beauty.

I never put any of that stuff in my cholent. Only meat, beans, barley, potatoes, real onions & garlic, salt & pepper. That's it and it's delicious.

If he has digestive issues real onions(except small amount) and garlic probably are also no-go. paprika and pepper is also tricky and problematic for some.

It sounds like FODMAPS, which means that onions and garlic are out.

OP, when I have guests with dietary restrictions, I make sure that there is enough for them to eat, but I don't necessarily ensure that they can eat everything offered. So, for example, I might make chicken, rice and vegetables that the guest can eat, but also have a kugel that they can't.
