what can I do with fresh sugar snap peas? I'd love to make an easy salad, maybe with colored peppers. Any ideas?

My favorite is plain, just blanched.

My favorite is raw, perhaps dipped in humus, perhaps just eaten as they come. I put them in DD's lunch as an alternative to baby carrots or some oter raw veggie. If you wanted to make something more formal, I would stir-fry them briefly with some red and /or yellow peppers and dress with a tiny bit of soy sauce. Don't overcook!

Thanks. I'm thinking to keep it raw and crunchy. Can I add red, orange and yellow peppers? Add some cherry tomatoes? Any dressing ideas?

Raw and crunchy is absolutely the way to go. Red, yellow and orange peppers, a bit of scallion and a sesame soy dressing (sesame oil, soy sauce, a touch of lemon juice and some sesame seeds)?
