Stuffed capon question

I debone my own drumsticks and stuff them.
I leave the skin intact and the bottom knuckle, my guest think it's a drumstick until they cut through it and realize there's no bone, and it's stuffed.
Only problem is, they tend to curl.
How can I leave the skin intact and keep the drumstick from curling.

If it's curling, secure the two sides together at the bottom with a toothpick. And remove after baking.

Huh? Just stick a toothpick?

Oh, I didn't realize what you meant. Glad you found a picture!
I pack mine side by side in a snug pan and bake like that. They don't curl.

I tried that, they all curled to one side.
Is it because I leave the skin intact? I don't slit it open.
Is there a way to do this without it curling to one side.

Maybe it's the way it's deboned? I don't usually do it myself and I usually use the full thigh and leg attached as one capon.

I'm wondering why you're referring to deboned chicken legs as capon. According to everything I found on the internet, capon is a castrated male chicken.

For some reason the kosher stores in my area refer to deboned chicken bottoms as capons. I know it's not the right term but that's what they call them!

The ones from the store the skin is cut through, so you have a seam on the bottom. Mine is seamless. I slip back the skin like a glove. Maybe that's why.

It's possible. I only leave one side connected to the skin.
