Can people please post a good baked schnitzel recipe for pesach--gebrokts is ok. Potato starch? Matzo meal? A mixture? Should I coat the chicken with one before I egg?

Potato starch, ground nuts (and matza meal) with whatever spices you use. And salt.
First dip in beaten eggs then the crumbs.

Mix a bit of potato starch with coarsely ground almonds or pecans as the outer coating. Delicious all year round, too. Dip in egg first or mayo if you use or make from scratch.
