Baking without sugar over Pesach... recipes please

Hi, I have guests for the whole of Pesach who cannot eat sugar.

Can I substitute sugar replacements like sweet and low in my baking instead?
eg if my recipe calls for ground nuts, eggs and sugar, can I put in sweet and low instead, or xylitol, or anything like that?

Please advise, as I have never used any sugar replacement products before in my life!

Any recipes or advicce? thanks in advance

It really depends. The substitues don't necessarily taste the same. And the texture can change.
Your best bet is to start with a recipe that doesn't need too much sugar to begin with.
Can your guests eat bananas, natural applesauce, coconut sugar? These are all more natural items that can be baked with and maybe you can combine these with just a bit of sugar substitute.

Look for paleo or ketogenic recipes, they should mostly be kosher for passover.

I agree with ra-mom...try to find recipes that use bananas or fruit (dates?)... Pesachdik sugar substitutes are terrible and do not taste good when used in large quantities such as baking.

Honestly? Only bake if you must. If not, skip the baked goods and offer fruit for dessert. No one will die if they don't have sugar-free cake for a week.

I would make sorbets, fruit salads, etc. for a guest who couldn't eat sugar.

I wouldn't use sugar substitutes in KLP cakes, I would use honey, applesauce, etc. because it can taste awful with more than a spoonful or two of sweetener.

Also, you can make cakes for everyone else with sugar, and reserve a few sugar free cakes/cookies for your guest; you don't need to serve everyone sugar free stuff.

it all depends on the reasons they don't eat the sugar

I have seen kosher for pesach agave nectar which has a low glycemic index + it's sweeter than honey or sugar so you use less & can be used as a replacement in baking

Thanks to all who responded.
my guests are diabetic.

I just want to be able to make a couple of cakes/cookies for them so they dont feel totally deprived when everyone else is eating the good stuff. And yes, I do lots of fruity sugar free desserts as well...

Greenfire adn Pineapple, if you see this thread, would you mind elaborating please on how to work out the amounts of the sugar substitutes that you suggested compared to sugar. Thanks

boysrus, check with your guest about xylitol as I'm not sure that everyone who can't have sugar can have xylitol.
I don't think diabetics can have agave.

If your guest can tolerate honey
There are some great recipes on elanaspantry.com
Personally I'm subbing xylitol for the honey in those recipes.
Don't know if it's going to turn out the same.

I would first find out what type of sweetners your guest can have since these ingredients are expensive.

If your guest can have dates, there are many raw vegan desserts that are really yummy.

Chances are, if he's diabetic, he can't have honey, dates, coconut sugar or agave, since they are high on the glycemic index

Your best bet is xylitol,but it still scores 12 on the glycemic index.
The package does state safe for diabetics.
Remember this is Birch Xylitol NOT Corn Xylitol, it makes a difference health wise.

Glycemic index
Xylitol 12
Dates 46-55
Honey 45-64
Coconut sugar 35
Agave 13, but is very high in fructose

Diabetics have a problem with carbs, not just sugar.

If your dessert is high in carbs, it may still be problematic.

I made the 321 cookies using xylitol.
I used a little less than 3/4 cup, instead of the 1 cup called for.

3 cups ground nuts or coconut, in any combination.
2 eggs
1 cup sugar (I used 3/4 cup xylitol)

Then I added vanilla extract.

I also made variations
To 1 batch I added sliced almonds and cocoa
To 1 batch I added chocolate chips
To 1 batch I added lemon juice and dried basil, these I made into biscottis.

So easy, and yummy.

Do you have specific recipes? Do you just use your regular recipes and just sub for the sugar?
