Please share your stovetop pesach recipes - those that don't use anything (no potato starch, sugar....)
Anything that can be frozen is a plus

Make egg blintzes (no prob to omit potato starch)
Fill it with vegatable filling. What veggies u use pesach?
I think most side dishes will be hard to freeze cuz they're mostly potato based.
We do lots of kugels.
U can do a stove top one and probably freeze.
Potato
Yerushalmi (w/o starch. Grated potatoes is secret ingredient)
Apple
Sweet pot.
For a nice addition to plate- pickle beets, turnips or other veggies.
Not sure if latkes or chremslach can b frozen but that's our favorite pesach side dish (shmaltz is the secret here)

Just noticed ur title included mains:
Turkey goulash
Shnitzel/Foshet/patties- small pieces of cooked potatoes instead of bread crumbs or blend and add sweet potatoes ( u can hide squash and carrots in there too)
Cutlets- coat with ground and chopped nuts
We make "shmarma"- sautee tons of onions, add cubed chicken breasts, little bit of ginger, grated carrot for color and wine. We serve it with yummy matzah meal rolls on achron Shel pesach.
Chicken bottoms or turkey drumsticks wiith homemade jam or duck sauce
Just remembering this off the top of my head what my mother makes with minimal ING.
Salads we do carrot and beet.
Soups- vegetable, potato, chicken of course and borsht.
I'll let those who use more products chime in!

soups - zucchini, orange (carrots, sweet potato and butternut squash, either pureed or diced or chunks)
eggplant and tomato dip, dice and saute forever until it's well done and mushy

First sautée tons of onions cut in big chunks, a huge pot full.
Freeze 1/2- usful to always have
To existing 1/2 add Zuchinni in 1/2 inch slices, salt, and any spices you use,
Sautée until zucchini is al dente.
Freeze 1/2- 1st side dish, serve hot or cold.
To existing 1/2 add eggplant (Japaneese is the best to use), tomato, tomato paste if you use, and water. Add more salt and spices. Let this cook on a low flame, for a long time-
Freeze- 2nd side dish- serve hot or cold.

I'm also following this thread. I need to be low carb as well as nightshade-free. That means no potatoes, no tomatoes, no eggplant, no peppers :-(

Use butternut squash and parsnip instead of potato for side dishes.
Parsnip puree with shmaltz should be really good. Butternut squash mock potato salad. Tri color vegetable fries or cubed and roasted. Roasted beet salad with ginger dressing. Avocado, mango, red onion, lemon salsa over chicken or fish.
What vegetables do you eat?

Ra_mom, you were always good at this stuff.
I can pretty much eat most of the vegetables you mentioned. If I'm really strict I should stick to non-starchy, but I'm relaxing my standards over Pesach.
Tell me more about lemon salsa?

I meant a salsa using diced avocado, mango, red onion, and seasoned with a drizzle of lemon juice and salt.

PS. Don't relax your nightshade free standards if you can help it. Rather relax the carb ones by using sweet potatoes and tapioca starch instead of the white potato versions. I make every potato recipe in sweet potato form, making savory fries, hash browns, soup...
