I usually do not cook beets, but for Pesach this is one of my standards, from beet borscht to beet salad and more.
My question is: I'd like to peel the beets tonight, but not cook them until the morning. Is it best to leave them soaking in cold water overnight, or just put them in a plastic container dry and then immerse them in water when I am ready to cook them. Will the beets spoil if they sit overnight without water? My main concern is that if I let them soak in water overnight, will all the color come out of the beets if I change the water when I'm ready to cook them. Or should I just cook them in the water they've been soaking in all night. Help!

Why not roast the with the peels on and chill them until you need them? They easily peel once roasted.

You can peel, wrap and refrigerate. No water necessary.

I would just put it in a ziploc. But you can't store it this way indefinitely. OP said she will use it tomorrow.
