You can do a puréed Zuchinni soup with basil, sautéed onion, and roasted garlic. Peel the zuchinni for a better color

I do something quite similar but w zuchinni and leeks. I never tried it cold!

I make a yummy fresh pea soup that's good cold, but that doesn't help you for Pesach unless you are Sefardi.
How about vichyssoise?

Mango or watermelon gazpacho is also delicious but not exactly a vegetable soup
