Help! I ordered to much onion for Pesach and I'm drowning in onions!! Any recipe that uses lots of them?

I sauteed a bunch to put in the freezer. I don't need so many right now but I always need sauteed onions for different recipes that way I have them ready to go and I had something to do with all my extra onions.

Also why the need to freeze sauteed onions? I just cut an onion when I need them. Is it so much easier to freeze them ?

Because you're preserving the onion by cooking it and freezing now and it will stay fresh in the freezer until you need it.

Onion rolls!
Make any bread/challah dough. Roll out pita sized circles. Smear with olive oil, cover with chopped onions and sprinkle with salt. Sprinkle a little poppy seeds if you like the look. Roll it up and paint with beaten eggs if you want.
These freeze well and are so delicious!
If you have an event coming up, everyone will be impressed if you serve these warm.

Super easy caramelized onions:
Slice all the onions. Put some olive oil in the bottom of a slow cooker. Add onions and stir to cover them with a thin layer of oil. Set to slow and cook overnight. Your house will smell amazing in the morning, and the onions will be as sweet and mellow as honey!
Caramelizing changes all the starch into sugar, and totally changes the flavor. If you add them to soup, it will give a deep and complex dimension to your food.
The freeze perfectly, and you can store them indefinitely that way. Just put about a cup of cooked onions in sandwich bags, so that you can take out small potions as you need them.
If you have extra garlic, peel the cloves and add them to the crock pot. Double yummy!

Sauté lots of chopped onions on a low flame. Mix with mayo, salt and pepper.
