ISO something to make in a crock pot for shabbos day that is low carb but also kid friendly. Anything? Or am I dreaming that it's possible...

I made a pot roast with radishes (kind of taste like potatoes).

More meat and beans. Less potatoes obviously.

I'm concerned too many beans will be too rough on the stomach and not kid friendly. Looking for either a potato substitute (interesting thought about radishes - never heard of that!) or a different idea altogether but made in a crock pot

You can make chicken in the crockpot but honestly the crockpot is not the best method for low fat food since the meat/chicken cooks in its fat and white meat dries out. I would just make grilled chicken and salads

Wouldn't butternut squash give off a sweet taste? DH only likes it in small doses. Thinking of using kohlrabi and quinoa...

Celery root will also kinda taste like potato.
Cut a celery root in 1/4 wedges, enough to line the bottom of the crockpot.
Generously season
Then take chicken pieces
Generously season and lay them on top
Put on low before Shabbat starts.
DO NOT ADD WATER!!!
Don't know if the kids will like it though.
Kohl Rabi will also work.

You can make stuffed cabbage (or any veggie). It's low carb if you don't add rice to the meat and use a sugar substitute for the sauce.

BTW, check the carb count on quinoa, don't know if it's low enough in carbs.

Goulash? Lots of meat with potatoes for the kids and carrots for the dieters.
Beans are carbs

meat, radishes, zucchini. Prob better to make it like chili http://ketokarma.com/keto-chili/

But be careful of the tomato and paste. Find one that is low carb.

Well, does having potatoes in it affect the carb count if I don't eat it?

It will make it sweetish, but think of all the people who put other sweet stuff into their cholent. It's a classic substitute but if you don't like it, people are coming up with great ideas.

I add some turnip and parsnip. Parsnip has carbs though.

In the days that I was being much stricter with carb restriction, I would make a cholent of just flanken, loads of sliced onion and fresh garlic. Then I'd make a batch of rice in my rice cooker for the carb eaters to enjoy along with it.

I made a cholent recently with beans, meat/chicken, onions, and a little sweet potato. I soaked the beans for a while to be easier on the stomach. My picky kids ate it, but requested my regular one for the next week.
You can also put in a while chicken with low carb veggies in the crock pot. The chicken gets really soft and kids usually love it.

Waking up this old post to see if anyone has any new ideas?

I'm eating (not keto, but) low carb, higher protein fat these days

My family enjoys a regular carb heavy chulent, but into a slow cooker bag I might add an alternate chulent:
meat, frozen cauliflower, a bit of onion, garlic & spices, oil. I heard recently of black soy beans, a lower carb bean.
The frozen cauliflower kind if dissolves, it's surprisingly good.

Any other ideas?

I think it's a brilliant idea to have a keto cholent going in a bag along side the carb heavy cholent.

Adzuki beans are extremely healthy. They still have carbs, but they have tons of protein, vitamins, amino acids, and other stuff that regular beans don't. You can find them in health food stores and Asian grocery stores. I think Whole Foods sells them in bulk as well as in packages.

You do need to soak the beans overnight, and change the water a few times, just like you would with any other dried bean. They cook best in a pressure cooker like an Instant Pot.

Taste of Eden had canned Adzuki beans a while ago, but I'm not sure it they still make them, or what heksher they would have.
