A good friend used to make us meat bourekas for pesach. Unfortunately she moved and I never quite learns how to make them. She liked to talk out recipes while I need an actual recipe. I know she soaked the Matza to be pliable. Anyone have such a recipe?

You can try to make a dough using mashed potatoes, potato starch, and eggs. Not sure of the measurements. Just play around with the ingredients until you can handle the dough without it falling apart or being too sticky.

Even easier, bake them in muffin tins. Grease the tins, line them with the potato dough, and then put in the meat filling. Top with the remaining dough, making sure it seals with the lower crust. Brush the tops with some egg yolk. Sprinkle sesame seeds on top, if your minhag allows, or top with finely chopped onions.

I wouldn't but I would cook the meat first
