and like DREAMING said: Bake ziti - mix it in your sauce along with shredded mozzarella

yes! It bothers me so much, for some reason, that so many frum women I know think you're supposed to use cottage cheese to make lasagna and baked ziti!!!! And then when I tell them that you're supposed to use ricotta, they look at me like they don't even know what that is!!!

Thank you! This is one of my pet peeves, too!!

It's wetter/creamier than farmer cheese but works well for these things.

For blintz filling just mix together with a fork

1 lb. ricotta cheese
2 egg yolks
2 Tbsp flour
2 Tbsp sugar (or more to taste)
1 tsp vanilla extract or 1 Tbsp vanilla sugar

For cheese pancakes, mix together with a fork

1/2 cup ricotta cheese
1/2 cup flour
1/4 cup sugar
2 eggs

Pancakes were delicious!!! and easy to make. Recipe doesn't make too many though, maybe about 10-12.

Going to try the blintz filling for Shavuos.
