I only have a fleishig oven and not keeping on a burner for shavuos. What recipes besides baked ziti are good warmed up covered or served room temp?

You can warm up a lot of things in the oven covered.
Blintzes, eggplant parmigiana, any pasta dish, quiche or casserole. Even soup.

If you are leaving a gas oven on over yom tov, make sure to leave a window in the kitchen open a bit. Carbon monoxide.
