I've always used fresh yeast in challos, now I have dry yeast at home, how do I convert the measurements. The challo dough calls for 3 1/2 oz fresh yeast, how much dry yeast should I use? It's for reg white challo flour.

Use 2-1/4 teaspoons dry yeast for every oz fresh. So you would use about 3 Tablespoons dry.
