Rib Cap doesn't need much. Allow steaks to temper at room temperature for 30 minutes, then lightly oil and season well with salt and pepper. In a very hot cast-iron skillet, cook to desired doneness. (Medium Rare is 3 minutes on each side). Allow the steaks to rest before slicing.

Should be fine if you know how to grill until well done without overdoing it. Serve right away.
