You can use any cream cheese. If using bars, bring to room temperature before using to soften.
Cheesecake
3 (8 ounce) reduced fat whipped cream cheese
1 1/8 cup sugar
2 teaspoons pure vanilla extract
4-5 eggs
2 (9”) graham cracker pie crusts
Preheat oven to 325-350° F (depending on oven).
Blend cream cheese, sugar and vanilla. Add eggs and mix until just blended.
Divide batter between the 2 pie crusts.
Bake for 40 minutes until center is almost set.
Turn off the oven, open the door partially, and leave the cake inside to cool completely, so that the top doesn't "crack".
Yield: 2 cheesecakes
