Hi all!
I need to make supper for 25 teenage boys....something fairly cheap and easy, they are really not picky.

I can come up with basic chicken and meat ideas, but need easy starches and (especially) vegetables that are easy and good...and cheap. LOL

This is a great easy rice recipe to bake in the oven.
But you def have to multiply. Maybe make 6 times the recipe in 3 pans? I"m not sure how much you would need.

2 cups rice
1 Tbsp onion soup mix
1 tsp salt
2 Tbsp olive oil
2 Tbsp soy sauce
4 cups boiling water.

Mix all in 9x13 pan. bake at 350 for 1 hr and 15 minutes

Roasted Vegetables
Heimish Simcha Cookbook

3 large zucchini, unpeeled, cut in round ripples
3 large yellow squash, unpeeled, cut in round ripples
2 lg. red onions, cut in chunks
2 Spanish onions, cut in chunks
2-3 red peppers, cut in chunks
2 yellow peppers, cut in chunks
2 orange or green peppers, cut in chunks
4 teaspoon salt
black pepper, for sprinkling
basil, for sprinkling
1/2 cup oil (can use less)

Combine vegetables with salt and sprinkle with black pepper and basil. Mix with oil. Put into single layers in several large roasting pans and bake at 450 for 45 minutes, stirring occasionally.

Serves 30.

Sugar snap peas -

- frozen sugar snap peas
- baby corn
- sliced canned mushrooms
- diced red pepper
- red onion

lay on baking sheet. spray with pam - salt, pepper, garlic powder, soy sauce. if you want some soup mix.

Red potatoes roasted in oven with olive oil and basil and onion powder and salt. Yum easy cheap can make it the same day. Use frozen basil I usually use 4 medium red potatoes to 3 cubes. Fresh basil is very good too. Bake 400 degrees till golden

Orzo is also great side. Can add in cubed veggies such as pepper and/or mushroom.

Israeli Couscous (for 6-8 ppl, adjust amounts as necessary)
1/2 cup diced each
Onion
Red pepper
Yellow pepper
Orange pepper
Green pepper

2 cloves garlic finely minced
1 pk Israeli couscous
2 cups hot water
2 tsp consume or 2 tsp salt (to taste)
white pepper to taste (can use black)
Optional finely chopped parsley

Sauté on medium flame onion until translucent
Add peppers, sauté until soft
Add garlic
Add dry cous cous and sauté a bit on a high flame.

In a cup pour the 2 cups of hot water and add consume or salt and pepper.
Taste, adjust to desire taste.

Pour into toasting couscous.
Bring to a boil.
Stir.
Lower flame and cover until all the water is absorbed and couscous is soft.
Add parsley

String beans
Stem and wash fresh string beans
Take a big sauté pan with a little bit of oil and let it get really hot
Add the string beans and salt and let them cook on a high flame until you see some carmalization, some string beans turn a little brown.
Add 4-5 Tbsp of water and cover pan, cook for 3 min.
All this on high.
Uncover and cook for another 3-4 min until most of the water evaporates.
Add salt to taste.
Toast some slivered almonds and add to string beans JUST BEFORE SERVING.

Sweet potato
Wash well a few sweet potatoes
Put in a pan, foil
Bake until done.
Slice in thick rounds before serving


Yellow rice with peas and hot dog ( always a big hit)
Make rice as directed on package, but add 1TBSP of turmeric to cooking water to make rice yellow.
Defrost hot dogs
Defrost peas
Slice hot dogs in thick rounds.
Cook hot dogs in a Seperate pot until done, and drain well.
When rice is done mix all together.

That sounds good and easy.....How much tomato sauce for how much squash? And do I bake it or cook it on the stovetop? Any other spices to add?

U can use flavored tomato sauce or a can of diced tomatoes with garlic/basil etc, but it's good just plain too. I put the squash in a pot, add sauce to basically cover the squash (doesn't have to cover completely. The top squash gets steamed. Then you can mix all the squash and there will be enough sauce) and cook on low flame until the squash is soft. Doesn't take too long.
