If I bake potatoes in a fleishig oven, I can't serve it with cheese, correct? (I'm Ashkenazi.) But I can serve it with Macaroni and Cheese, but eaten separately, right? Can I serve it on a milchig plate? Does it matter if the oven is ben yomo or not? What about the baking dish?

Don't serve on a milchig plate.

But, if your oven was entirely clean (use your hand to wipe test) and wasn't used (has been cold) for 24 hour's, then the food is considered parve and not as if it was baked in a meat oven.

I always thought you couldn't serve it alongside macaroni and cheese, but there's no problem eating it before or right after. You should really ask a rav.

There's a huge range of opinions on this- from baking meat and milk at the same time in separate pans in one oven to needing two different ovens for meat and milk. Really depends on community expectations etc
