It's more like a thin crepe. What I really need is the cheese filling. My mother, a"h, made the filling with farmer cheese or pot cheese but I'm not sure of the whole recipe

What my mother makes is farmer cheese with a raw egg yolk and lots of sugar.
Variations:
One of these - or all -
Cottage cheese
A whole raw egg
Confectioners sugar

Sometimes my grandmother would mix together cottage cheese and vanilla sugar.
Have you ever had the thicker, folded over and fried polochinta? yummmm
