What to do with 8oz of farmers cheese

I have leftover farmers cheese from shavuos. Any ideas of good recipes? It's not that much and I'd prefer not to buy more to complete a full recipe.

I've found you can substitute it like cottage cheese. I eat it plain with canned/fresh peaches--yum!

You can make red cheese salad .
Mix with a half small container of sour cream some salt , diced purple onion and paprika

Mini cheesecake, just cut your recipe to fit.

Lasagne, with lots of veggies and extra mozarella. Sprinkle a little parm on top for extra yumminess. I like to use eggplant, onions, mushrooms, and a jar of spaghetti sauce. Toss in a handful of noodles to soak up the extra liquid from when the veggies cook.

Bake for about an hour, and poke it to see if it's still runny. If it is, bake it a little longer, but be careful not to let the top burn. It's probably a good idea to cover with foil the first 1/2 hour or so.

With peaches sounds up my ally because it's so easy and yum

Purpleonion I love how your recipe is with purple onions Smile

Ziti, lasagna, eggplant parm, cheesecake are all things we just enjoyed over shavuos so I don't want to overdo it!!

My cheese latke recipe has cottage cheese, is it a straight substitute? Or can I have your recipe nicole81?

My cheese latka recipe comes from Spice and Spirit (the purple cookbook), and is really yummy!
