It is hard to get used to, I remember having a hard time with that at the beginning. Try whipping the coconut milk in a blender before putting it in the coffee (makes it foamy like a latte) and sprinkling cinnamon on top. I also like vanilla almond milk - check ingredients, not all are compliant.

Violet can you recommend milk substitute names and brands that are compliant? I'd like to explore other options.

No compliant desserts, because you're not supposed to be having desserts.
Try to break the "needing sweet at the end of the meal" habit.

Shabbat Menu

Broccoli souffle for Friday snacking

Half matzo
Guacamole and veg sticks
Chicken soup and zucchini strands
Steak
Hasselbacks
Roasted green beans
Pineapple coconut milk frozen puree

Half matzo
Ranch dip and veg sticks
Egg salad
Mushroom and meat soup
Grilled chicken salad
Cubed melon

I usually don't eat so much food in one sitting or eat dessert but making options so not stuck during shabbos.

my shabbos menu:

minimum of matza
baked salmon (homemade mayo and spices)
vegetable salad
chicken soup
roast chicken (with spices) , baby potatoes, green beans.


matza
liver and egg salad
cholent - no beans or barley, it was like a pesach cholent but no complaints BH.
potato kugel
grilled chicken salad


matza
tuna
vegetable salad
egg salad
avocado and tomato salad

hardly different at all than a regular shabbos, besides for no challa and dessert. and the cholent comes out different.

I forgot about liver! Thanks for reminding me of a great option. I like it with sauteed onions.

I do have a harder time with regular suppers during the week, because I'm used to dividing my plate into 3 - protein, starch, vegetable.
So I usually make a starchy vegetable (potato, sweet potato, butternutsquash), plus a cooked vegetable.
fresh veggies I save for breakfast and lunch , so I don't make them for supper. I don't want to get sick of salads.

I made a really easy frittata- I sauted 2 onions and a small package of broccoli cuts. beat together 10 eggs, mixed with the veggies and put in a pan, baked for 45 minutes.
It was so good, I had it for 3 breakfasts in a row.

My favorite coconut milk is Golden Star - has gotten harder to find but check Safeway/Randalls or Walmart if you have either of those.

For almond milk I like Blue Diamond unsweetened vanilla.
