I'm making a kugel and the recipe calls for 4 eggs, however I only have 3. What will it turn out like with 3 eggs?Should I substitute?
I'm making Riva Pomerantz' kugel.

You can google egg substitute.
But question: are your eggs extra large? Most recipes call for large, so if yours are XL you might be able to get away with the three.

Your kugel should turn out ok with just the 3 eggs.
You have the option of adding a few extra tablespoons oil to the kugel mix instead of the egg. (I'd probably do this.)
Or mix together 2 tablespoons water, 2 teaspoons baking power, 1 teaspoon oil (but don't use this if the recipe already has other baking powder in it).
