I make gluten free oat flour pitot without yeast. You can google recipes. I use a bit over half oat flour and dilute with a mix of other flours like tapioca, potato, flax. I use psyllium husk powder to make them doughy enough to turn into pitot. You can cook them in a hot dry frying pan. Instead of yeast that was called for, I use a mixture of baking soda and lemon juice but I am thinking I could skip it as I don't open them up for sandwiches, just use them as flatbreads for dips and so I can wash. I don't love the recipe I'm using so I don't want to post it and I'm trying to find another.

Thanks! Appreciate your sharing. I've read about the lemon juice and baking soda mixture instead of yeast.
Anyone out there have a recipe that they do like and they can share?
