Probably.
Try putting a teaspoon of lemon juice in your measuring cup and fill to whatever amount you need with the apple juice.

Interesting.. Would you put grape juice in a marble cake when it calls for water?

I use apple juice almost all the time as a substitute in cakes and rugelach.

Pineapple juice works well and makes for a lighter texture

Years ago I was out of orange juice and in middle of a recipe...and my neighbor told me to do 1/2 water and 1/2 lemon juice. I've done it many time since with excellent results.

Yes water and lemon juice half and half is always wonderful alternative I use since my child can't have orange juice

The leavening process in cakes is accomplished by combining acids and a base to produce gas bubbles of carbon dioxide, which make your cake light and airy. IF a recipe specifically calls for orange juice, buttermilk, vinegar, lemon juice or molasses, that is taking the acid base ratio into account. Therefore, to replace those you must use a liquid that is somewhat acidic. Adding lemon juice or vinegar to water or vegan milks will do the trick. Good luck!
