Susie Fishbein has a wonderful recipe (I think, I'll explain in a minute) in Kosher By Design Brings It Home called Itai's Four Onion Chicken. The reason I say I think is because
- I only use one kind of onion
- I skip the garlic and honey
- I don't have brandy so I double the wine.

(If SF is reading this I'm sure she's saying, please don't call it mine Wink But it's lovely. Oh, and I cook it longer than the recipe calls for, too.)

I have a stuffed chicken recipe from family first that you prep and freeze and then cook from frozen. My kids love it. Let me know if you want it and I'll search through my phone.

It's from ra_mom. I don't know measurements but it's honey, soy sauce, garlic, salt and pepper.

I have a mushroom chicken recipe. Gets coated in seasoned flour, baked partially, and then a mushroom sauce that needs to be cooked. Pour over and bake rest of the way.... lmk if you want the recipe. I've frozen it with just the flour. But you can freeze it at any point in the recipe. Like flour, bake, pour sauce and then freeze.

If you like spicey. Take a jar of hot peppers (the round red and green ones). Slice them in half (remove the seeds ), put half in a baggie with four 1/4s of chicken. Do the same with the remaining peppers and chicken in another bag. Divide the brine from the peppers and pour into the baggies. Freeze. When you defrost for cooking, drain off the liquid and put the chicken and peppers (if your family likes spicy) into a lightly oiled baking pan.

I do save pickle juice and use it to marinate chicken, either for frozen prep or ready to cook. It does wonderful things to the chicken.

If you're freezing the chicken raw, either freeze the sauce separately, or freeze the chicken skin side down so the top is sitting in the sauce, then flip the pieces back up before baking.

I generally use a lot more flour and salt, double it, and freeze 16 chicken legs at once.

Realized I have it on my phone after all. Here it is

Mushroom Chicken

Dip chicken pieces in seasoned flour (can also do egg first, I never did)
Bake uncovered 1/2 hour
Pour the below sauce over chicken, cover and bake 1 1/2 hours

Sauce:
Sautee onions
add can of mushrooms
and
1/2 c sugar
1/4 c brown sugar
2 Tbsp soy sauce
1/4 c lemon juice
