Its time to start thinking about Rosh Hashana. Anyone have their menus done and want to post. Im looking for ideas....Thanks

I work three days a week so I have to prepare early if I want nice food over a three day yomtov.

the past fortnight I cooked and put in freezer:
Potato kugel
Beef veg stew
Roast chicken
Veg soup
Chicken soup
Gefilte fish
Fruit cake
Stewed plums
Baked rhubarb
Plain rice
Sliced salt beef
Vegetarian curry for veggie guests

Veg, potatoes, salad, salmon, spicy millet etc I will cook just before yomtov or on yomtov itself.

This coming week I will bake challos , honey cake and some more simanim (eg. Black eyed peas)

I am also serving a tofu and veg stir fry.

Wow you really got a head start.
I wanted to start at least buying the basics this past week, but hurricane Irma came along.
Now I'm nervous that there won't be things next week at the store to buy, because if the electric goes out its all spoiled.
Better than spoiling in my own house I guess.

Things I'm planning in advance
2 Morracan fish - prepped and frozen raw
2 Fried fish-all fried
4 chicken dishes- prepped and frozen raw- haven't decided which kind
1 Stuffed meatloaf spinach spiral- cooked and frozen
3 -4 roasts
2 corn beef
1 pan stuffed artichoke
Meatballs seared but not cooked
Simanim -spinach balls, leek patties,
Challah r
Franks n blanks
Chicken fingers

Not sure what else.
If I don't have electric after the storm I can't cook (or shop)

I've made chocolate cakes, apple crisps, plum tortes, cauliflower soup, chicken soup, carrot apple for the freezer.


This Sunday I am making challah. Later in the week I will make Persian meatball stew, chicken cacciatore, and at least one more freezable main dish. I make double of everything I freeze so sukos is at least partly taken care of.

Closer to yom tov I will make meats, fish and other dishes that can't be frozen: grilled chicken cutlets, turkey breast, roasted veggies of various kinds, sesame green beans,carrots and leeks, sweet potatoes and apples, mujadara but using black eyed peas so it's a siman. Last minute we make various salads. I am sure I am missing something but that's more or less it.

I have made apple crumble, strawberry muffins, coffee cake, 2 batches of challah, potato kugel, squash kugel and mushroom borekas. And some fried fishballs which we ended up eating half of for shabbos. (a lot of this I made for shabbos but made triple batches so I had enough for the freezer - eg I made 3 big kugels and we ate one on shabbos)

This week I will make more fish, soup (veg), maybe things like meatballs and chicken nuggets. Possibly also some rice/orzo dishes.

erev yom tov I will cook roasts, big pot of chicken soup.

Main thing is to clean out my freezers so I have space to store it all!

Can't start
No electric post hurricane
No oven, no freezer, no fridge, no light
Don't know when electric will be restored
A tree uprooted the entire underground electric wiring for my entire neighborhood.

I made about a gallon of delicious soup with vegetables and blended cashews. Then my DH reminded me that we don't use nuts on RH...

Oh well, I guess we'll have it for second days.

Do you not eat all nuts? We only abstain from walnuts because gematria of egoz is same as chait

We don't eat any nuts except I think almonds.

The recipe is 9 leeks, 3 potatoes, 7-9 oz cashew nuts and a few cloves of garlic.

Wash/check the leek, roughly chop and stir fry in oil. When browned, add the rest of the ingredients plus salt & pepper to taste. Cover with water and cook. When cooking is finished blend and serve.

It freezes very well.

I hope you enjoy it. Don't overdo it with the blender as the nuts add texture as well as flavor.

I've been thinking about the Florida imamothers and how difficult this holiday season might be because of the post hurricane circumstances that impede preparations.
What is your situation now?

techina, olive dip, avocado dip, and babaganush

for both night meals for the minim,
cucumber carrot salad, red red (black eyed peas), beet slaw, leek kugel, fish patties, dates, and tongue

first night, also butternut squash soup (minim), and honey chicken
second night, also duck sauce roast with grilled butternut squash slices

Thursday, meat kabobs, apple kugel, mushroom with soy sauce, honey red potato salad, and cole slaw

Friday, meat patties, but really chicken, potato kugel, corn salad, and a lettuce salad

Then some things for shabbos. I hope it all tastes good because I always seem to try new things instead of using what I already know. If not, I'll just make sure we have enough challah Smile .

I normally would make the honey cake posted here, but I don't have an oven or stove for that matter. No gas!! Cooking everything in the crock pot, George Foreman type grill, microwave, and milichig toaster oven.

This is my basic menu. I might change some stuff after I get my meats if I see something else that meets my needs. But I am starting with this and going from there. Shabbos is my usual.

I haven't started cooking yet. Looks like it will be a marathon on Monday and Tuesday. Plus I have to make compote.

Standard


Whatever has a dash I made already. Fish I'll do Wednesday. (Shabbos fish I'll cook Friday.) Salads/some veggie sides I'll make on yt. Plan to buy dips. I'll likely have leftovers and will use for Friday afternoon meal or Thursday night meal instead of what's planned.
