Can I sear my roast now, caramelize the onions and pour over the glaze, and then put it in the fridge to cook tomorrow?

Here's what I would do: I would caramslize the onions now, put in fridge, and tomorrow I would sear the meat and cook it with the onions

Yes you can. Bacteria won't breed in the fridge in a few hours.
