Recipe for Soft Honey Cookies

A no margarine recipe from the Heimishe Kitchen Simchah edition. Tried & true.

9 eggs
2 1/2 cups sugar
1 cup honey
1 cup oil
2 tbsp. vanilla sugar
3 tsp. cinnamon
2 tsp. baking powder
1 tsp. baking soda
9 cups flour

Combine all ingredients, kneading well. Refrigerate 3-4 hours. Form into balls. Bake at 350 for 12-15 minutes. Cookie is done when bottom is brown. Do not overbake.

Yield: 70 cookies

Those are huge quantities!

No way this makes 70 cookies, I'm guessing more like a few hundred.

I wish it would! I guess it depends on the size of your cookie.

Last year I made 200 of these cookies. I opened my freezer on erev RH to take them out and I didn't even find one piece left!

If you have any cookie eaters in the house, they'll be gone before you know it. Just put all those 9 cups into the mixing bowl!

I use a very similar recipe. It's delicious. I learned a great tip to keep them soft. Put the cookies into plastic bags immediately after removing them from the oven. They will be really soft.

great idea! you dont have to put parchment paper between the cookies to keep them from sticking to each other?

Just made the dough and put it in the fridge but I baked one cookie to see if it was sweet enough because I put in less sugar... sooo good!!

First I put 1 3/4 cup and that's maybe what I would do during the rest of the year with half ww flour but hey, it's supposed to be sweet Smile
so I added a bit more without measuring prob. 1/4 cup and it's perfect!

I put 2 cups of sugar. It's sweet enough, but the cookies are a little drier. I wonder if cutting 1/2 cup of sugar made it drier.

I got around 140 cookies and they're pretty big, yours must be REALLY big Smile
or at least there were 140... Smile
as the instructions say do not overbake!!! 12 mins were perfect for me.
I don't think an extra 1/2 cup of sugar would make it softer but who knows?

I got 100 cookies. The size depends on my kids mood as they roll the balls. Smile

Are you sure it calls for 1 cup honey, not 2?
I saw 2 recipes with 4 eggs & 4 cups flour with 1 cup sugar.

This recipe looks like it could be divided into three easily, so....
9 cups of flour becomes 3 cups
3 eggs etc

The thought of rolling all that dough into balls is overwhelming. A third of the recipe makes it doable...

It looks delightful.

These are the measurements for 1/3 of the recipe.

3 eggs
7/8 cup sugar
1/3 cup honey
1/3 cup oil
2 tsp vanilla sugar
1 tsp cinnamon
3/4 tsp baking powder
1/4 tsp baking soda
3 cups flour
