I've been making the vanilla bean apple cake from either the bina or mishpacha cookbooks and it's extremely hit or miss on how it comes out
So last night's version was a flop and I'm looking for an alternative. Any suggestions?

No Fail Apple Cake:
1 box of Duncan Hines spice cake mix
3 apples chopped up
Follow the recipe on the box, but reduce the amount of water by half. The mix will look dry, but as it cooks the apples will release moisture.
Enjoy!

Slice apples & arrange in pan. Pour batter on top bake at 350

Do you think this would work with only 2 eggs? (Someone is allergic to eggs in a high concentration, but not regular recipes like cookies & challah, so x2 would be fine but perhaps not 3). Tyia for any suggestions!

I realized that I can substitute the 3rd egg with egg replacer mix. But I just realized (I'm not the most experienced baker, but) where is the fat in the recipe?
Is that really how it's made or did an ingredient accidentally get left out?
Thanks again, I'm always on the lookout for the super easy yet delicious combo.

Here's my tried and true recipe:
Fresh Apple Cake
4 c peeled and sliced apples
1 c sugar
1 c brown sugar
1 t cinnamon
2 eggs, well beaten
2 c sifted flour
1 t salt
1/2 c oil (or 1/4 c oil and 1/4 c applesauce)
2 t vanilla
Do NOT use a mixer for this cake. Mix apples and sugar together. Add oil, eggs and vanilla. Sift together dry ingredients. Add to batter. Stir until well-blended. Pour into greased and floured 9 x 13" pan. Bake one hour until it shrinks from side of pan. (Check after about 55 min. to see if it's done. Depends on your oven.)

The recipe is correct. Need to beat the eggs and sugar really well before adding the flour. I admit that I have not yet successfully made it yet ( my husband has) but I plan to try again next week. This is a very simple version but if you google you will find many variations with more exact directions ( maybe you'll even find one with less eggs!)
