Does anyone know if I can freeze part of it?

I know you can freeze rice but this has an oil and vinegar based dressing so I would not assume so. Does anyone know for sure about this?

Based on whatever I've read , there is no way to freeze prepared sushi rice without causing it to dry out and crumble. The same is for refrigeration. You can keep the rice covered on the countertop overnight. Say prepare it erev Yom Tov and serve first day. That's what I've done. Once it's refrigerated the texture changes and it's not as good

Don't freeze it, it doesn't matter what sort of dressing. Bizzydizzymommy is right.
The only sort of rice I would freeze it long grain white rice like uncle bens that cooks up in separate pieces that don't stick. Then you need to rinse, drain, and this is important, only tastes good if you'll be serving it rewarmed until really hot, like steaming.
Sushi rice is sticky and is not served hot.
