I checked other threads for a recipe but couldn't seem to find any that appealed to me. Please give me a recipe for a pickled dark chicken roast . Do I have to boil it first? Would a honey, mustard glaze make sense?

My method:
Place roast in pot of water & bring to a boil. Spill the water & refill pot, bring to boil & cook 3 hours. Let cool & slice. Pour a bit cooked water on it so it shouldn't dry out. Serve with mushrooms sauce over it.
