Loaded veggie rice (mishpacha?)

I made the loaded veggie rice posted in one of the pre yt magazines and then misplaced the recipe - does anyone still have it and can post?

From Mishpacha YK edition:

3 sweet potatoes, cubed
2 zucchinis, cubed
3 red peppers, diced
1 lb (450 g) shallots, cubed
3 tsp salt, divided
1/2 tsp pepper
2 tsp garlic
2 tsp parsley
2 tsp paprika
1/2 tsp cayenne pepper
1/4 C brown sugar
1/3 C oil
3 C water
1.5 C raw rice

Preheat oven to 400 F (200 C).

Combine 2 tsp salt with remaining spices and brown sugar. Lay veggies on 2 parchment covered baking sheets and drizzle w/oil and cover w/ spices. Mix well and roast for 1 hr, stirring once in the middle.

Meanwhile, bring water to a boil in a small saucepan and add rice and remaining tsp salt. Cook over medium heat until the water is absorbed, about 20 minutes. Remove from heat and allow to steam for 10 minutes. Fluff with a fork and toss with veggie mixture.

Part of the recipe is missing. It starts with "combine .... remaining"

If anyone can full in the missing part, I would appreciate it.

Remaining in the recipe, ie the

2 tsp garlic
2 tsp parsley
2 tsp paprika
1/2 tsp cayenne pepper

You're only using a portion of the salt in the first step, but all of the remaining spices (in the list). Does that make sense?

Thanks, but what is the first step? The remaining part is clear.

Don't think anything is missing. I think it means the rest of the spices.

Eureka!!!

Sorry everyone!!! I am used to a different type of recipe totally. I was thinking maybe a portion of the spices goes in the rice or gets mixed with the vegetables first.

I probably would have written to combine the salt with the rest of the spices.

This is so simple. BH!

Nothing is missing.

Cut up the sweet potatoes, zucchini, red peppers and shallots. Spread them over 2 cookie sheet sized aluminum pans. Drizzle them with the 1/3 cup oil.

Combine 2 tsp salt, 1/2 tsp black pepper, 2 tsp garlic, 2 tsp dried parsley, 2 tsp paprika, 1/2 tsp cayenne pepper and 1/4 cup brown sugar. Sprinkle this over the vegetables.

Bake the seasoned vegetables.

Cook the rice with 1 tsp salt.

Toss together.
