Squash, the eggs sortof got scrambled when I added them to the pot of hot lukshen. any way around that ?

How long is THAT gonna take ?

In the other really thin noodle kugel recipe, the noodles were added to the boiling water and then they just sat there. In this recipe, you have to continue cooking.

Wonder why they cook in the first recipe but not this one ....

try adding a little bit of hot noodles to the eggs first to "temper" them, and
then add the mixture to the rest of the noodles.

If you're having a hard time caramelizing the sugar, you can use the kal kugel syrup. It's caramelized sugar and all you have to do is mix in the eggs, spices, and other ingredients.

1091, this is the recipe from "The Kosher Palette" that many of us asked for since 2008?

I just made it and the recipe in the Kosher Palette 2 cookbook is different. It was easy quick and great!

Yerushalmi Kugel (no caramelizing sugar)

4 1/4 c water
1/4 c margarine (I used oil)
1 c sugar
2 tsp salt (I used a pinch)
1 heaping tsp pepper
12 oz fine noodles
2 eggs
1/4 c dark brown sugar
3 Tablespoons veg oil

Preheat oven to 350 Combine water, margarine, sugar salt and pepper in large saucepan. Bring to a boil. Turn off heat. Add noodles to pan and cover. Let stand 10-15 minutes.

Combine eggs, brown sugar and oil in bowl. Beat w fork. Add to saucepan and mix well. Let stand 15 minutes.

Grease a bundt pan (I used loaf tins and lined w parchment). Bake 1 1/4 hours until golden. Let cool, then remove from pan. Mixture can be baked in muffin tins for 45 minutes

(OMG I realized I left out the cup of sugar when I posted originally).

Its ok if you buy a lokshen kugel . Its a difficult high maintenance food.
