I just bought Lieber's Colored Decorating Bar Pink in KRM, so its not old because their turnover is good, but its melting piecey. I needed pink chocolate and KRM only had Liebers.

I added a bit of oil, and its still a piecey mess.

What do I do?

How are you melting it? Double boiler works best. But it's pretty gross stuff, tbh.

what do you mean by piecy? Are you sure you didn't scorch the chocolate? Because that would cause it to seize up.

Get white chocolate and add food coloring.
Only melt in a double boiler.

That stuff is gross. And it's not made from chocolate hence the problem with melting.
The best way to *try* to melt it is in few second intervals in the microwave, mixing in between until just melted. Do not overcook.

This stuff is not chocolate, nor does it claim to be. Its “decorating bar”. The microwave will kill it. Melt on a double boiler, gently. Better to use a white chocolate bar and like others said, tint it with red food coloring.

Iirc, true pareve white chocolate is impossible to make. I can be wrong though. You’ll find pareve white chocolate flavored stuff, but not true chocolate.

No. If Id have scorched the chocolate Id see some evidence on the bottom of the tin. I see zero evidence of scorching.

Possibly water went into the melted chocolate. That ruins it.

Ive been doujng this for many years but not w the Liebers pink chocolate. I think water would make the chocolate look streaked and not shiny when it dries. I dont think water makes it piecey.
