I don't remember the original recipe.
Here's my slightly adapted version:
Chicken pieces (how ever many you need, breast or thought)
Insert 1-2 peeled garlic cloves beneath the skin of each chicken piece. Sprinkle with salt, pepper, garlic powder, paprika, onion powder and a dash (literally) of cayenne pepper. Drizzle with olive oil or spray with Pam.
Baked covered at 325 for two hours and fifteen min, then bake uncovered at 325 for 45 min. Keep on hot plate until ready to serve.

Any roasted chicken would be fine, so long as you don't eat the skin.
Teriyaki chicken -- 3 T soy sauce (low sodium is fine), 1 T olive oil ginger and garlic to taste. Marinate boneless, skinless chicken breasts for however long you'd like. Bake uncovered at 350, 25 minutes.
