Using immmersion blender in crockpot

Wouldn't this be a problem if you actually push it all the way to the bottom of crockpot due to the coating on most crockpot inserts? And if you don't put it to the bottom would be hard to blend soup completely?

A good quality immersion blender doesn't scratch any surfaces - the blade is higher up and protected by an outer casing.
If you've used the immersion blender before and know it doesn't pose an issue to pots, then the crockpot shouldn't either be a problem.
