Any suggestions on how to cook a 4 pound dark meat chicken roast? It is not pickled or pre-spiced. I don't want to stuff it with salami so any other ideas? I can cook it either in the oven or stove top, but I don't have a crockpot.

Put on your favorite glaze. Cover at bake at 400 for 1.5 hours. Uncover for an additional 15 minutes - can put it to broil then too if you want more color.

Combine a can of whole berried cranberry sauce with 3 tablespoons onion soup mix and spread over roast. Cook covered at 350 until done (probably 2-2.5 hours). Refrigerate before slicing.
