I need a easy sugar cookie recipe, no margarine please, I want to frost some and make some other into jelly in the middle cookies. Also which oil is best to use and which is best NOT to use. thanks

I never use margarine. I replace it with equal amounts oil (usually canola) in any recipe (cookies, cakes, brownies, anything). The trick is to fully emulsify the oil in the eggs and, for sugar cookies, to chill the dough before forming and baking. Use any recipe you like.
