Anything processed needs a hechsher. Basically the only things that don't need a hechsher are fruits, vegetables, eggs, nuts, and water.

I heard that sugar and water don't need a hechsher (in the US), would love to have that confirmed by someone who knows for sure.

Ruchel, how do you know what's in bottled water? I'm sure there are a lot of people who would not buy water without a hechsher.... I'm glad someone I know took a moment to ask, so it's clarified.

Not according to many, many poskim. This kind of blanket statement is what causes one Jew to say another Jew isn't frum. (Thereby violating a halacha in the name of a chumra).
The crc lists many foods that don't require hashgacha, as does Rabbi Eidlitz, The star k etc. Name one posek who says everything needs a hashgacha, including salt, sugar, paper plates etc.

Europe has been different for years in this regard. If I remember correctly most products don't have a hechsher and you work off a list.

Yes, we're used to seeing an o-u on bottled water, so it becomes sort of reflexive to look for it.

I don't know anyone who looks for an OU on their water!
In the case of traveling, if you don't read the language of the country, you need to know if there are brands that have additives.

For the poster that wrote eggs don't need a hechsher. I found out that not all chickens that lay eggs are kosher and when they aren't their eggs are not kosher. I'm not sure the specifics but we raise chickens and this was brought to my attention. I always thought all chickens and eggs were kosher but they aren't.
